Baked Chicken with aubergine courgette and tomato ragout
Serves 4
"Chicken breasts are quickly seared, then baked on mediterranean vegetables for a great one pot dish. For convenience, you can make the ragout well in advance, but for best results, bake the chicken breasts just before serving"
This recipe was taken from Gordon Ramsay's fast food. The meal was served on its own, but was still very filling.
Ramsay said this meal would serve 8, but for us it served 4 [hungry] adults!
Highly recommended.

Pan fried curried cod
Taken from the ministry of food.
A very fast and simple recipe. The Cod is just rolled in curry powder and then fried.

Vegetarian Enchiladas
Used a recipe from the Dodo book:
3 peppers chopped
1 onion fried slowly
1 bag Quorn mince
mixture of cheddar and mozarella cheese
1 can of chopped tomatoes
El Paso Enchilada kit (used the tortillas and the spice and one half of the tomato paste
Method
fry onion, add peppers fry for a while . Add mince and spice and tomatoes and a little cheese. Spoon into tortillas in a dish. Cover with tomato paste and rest of cheese . Cook for 10 minutes.

Lentil and Spinach Soup
Cooking time 30 minutes (fast)
Effort involved: Just chopping vegetables. One pan. minimal washing up.
Serves 4 (as a main); 6 - 8 as a starter.
This was a delicious meal by jamie oliver. The recipe was taken from the ministry of food cookbook (above).
It was fairly simple rustic style soup.
The topping suggestion was natural yoghurt. The taste of the yoghurt seemed to compliment this soup extremely well.
Overall a fairly painless, but yet impressive meal to make. Well worth the effort!

Christmas Savoury Strudel
Ingredients include filo pastry, cashew nuts (chopped) and onions, garlic, mushrooms, wine,tinned tomatoes cooked until almost dry. The filo pastry is layered with the cashew nuts several times then the mixture is put on the top and the whole is rolled up like a swiss roll and cooked in the oven. Everyone loved the tastes and the rosemary roasted potatoes from J Olivers at Home book went well with it. This is a must for Christmas week!

Cooking Time - 45 minutes

This meal steals the onion gravy from the bubble and squeak recipe in Jamie Oliver's "Jamie at home" book. The sausages are slow cooked in the oven on a bed of onions, instead of frying them. The onions are then used to make the basis for the onion gravy after the sausages are cooked.
